Sunday Night Dinners: Pork Adobo Chili

If you like the spicy, smokey flavor of chipotle peppers in adobo sauce, you are going to love this recipe!! I actually have never cooked with pork before and I am really not sure why - it's not any more difficult than cooking with chicken. If you don't care for pork, I am sure you could sub chicken in this recipe.

Here is the recipe in photos!

Brown the pork in 1.5 tsp. of heated olive oil.


Remove pork and set aside. Add 1.5 tsp of olive oil and cook the onion, bell peppers, and garlic. Stir occasionally and cook until softened (about 5-7 min).


Stir in the tomatoes, chipotle, chili powder, cumin, and salt; bring to a boil.



Add kidney beans and pork.


Reduce heat and simmer, covered, until the pork is tender (about 10-15 minutes).

I served mine over a 1/2 cup of brown rice and it was delicious!!


And like all of the recipes I've shared with you, this recipe yields A LOT!!


I've been enjoying the leftovers all week and they might be even better the 2nd time around.

Here are the ingredients:

1 T. of Olive Oil
1 lb. boneless pork loin, cut into 1/2" pieces
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
3 garlic cloves, minced
1 14.5 oz can fire-roasted diced tomatoes
2 t. chopped canned chipotle en adobo
2 t. chili powder
2 t. ground cumin
3/4 t. salt
1 15.5 oz can red kidney beans, rinsed and drained

Yum! I will definitely be trying that recipe this week!

To be honest, since our Thanksgiving dinner--I haven't been the greatest cook this week. Last night was the 1st time we were home for dinner all week--

So I've lived on salads, sandwiches, and left-over turkey!

Oh lovely! My husband would flip over that- and I think I could cut up pork without going all vegetarian and squeamish lol

Last week I made home made baked beans & cheesy polenta- it was delicious!

Um, YUM. My mouth is watering. I need to learn to not read these first thing in the morning =)

the last thing I made was chili casserole; chili on the bottom, cornbread on top. I'm assuming you can't have that due to gluten issues, though. I did make some really yummy vegetarian lasagna on Thanksgiving for my brother. Super yummy and I bet you could find gluten free lasagna if you wanted to!

I have been obsessively making mini pizzas for myself. I buy whole wheat pita's and make it on that. YUM. I usually just top them with veggies and a bit of cheese but I had this awesome turkey sausage that I managed to get three mini sausage-mushroom pizzas out of. They were SO GOOD and relatively healthy too!

I love making chili! It makes so much and is so delicious :)

Lately, I've made some sweet potato burritos which were so very delicious! Even my sister who's a very picky eater loved them!! (if you want the recipe, just google "addictive sweet potato burritos" - not kidding!)

that looks really good! I bet you could use tofu cubed up too instead of pork for the vegetarian option. i've been into tofu lately.

This looks so delish, but of course I'm allergic to beans. I'm wonderign if I could just leave them out.

I haven't really cooked anything exciting since Thanksgiving, but for Thanksgiving I made my famous cranberry sauce, as you know, and a butter cake with lemon glaze. Yum!

I am going to have to try this, probably with chicken though. Chipotle flavoring makes me happy. I am not a real big fan of pork.I made tacos last night. I'm making turkey sausage, egg, and cheese muffins tonight I think -- they are ridiculously easy and can be frozen then just popped in the microwave for an easy breakfast to go.

Yum looks good. I sent my husband a link cuz I know he would make it for us.. :) I am more into cooking in the summer or when I am not working. Though I do think I willo or ahem he will substitute chicken for pork.. I try and try to like pork, but I am really not a fan unless it is bbq pulled pork sandiwches, which we had last night.
