Shouldless Days: July

This past weekend I worked my butt off on Saturday (grocery shopped, team cleaned the house with Phil, did laundry) so that I could have a shouldless day yesterday.  As usual, it was glorious.  I completely recognize that it's probably not possible to have a shouldless day if you are a parent, but if your life circumstances permit taking a day to yourself, DO IT! Here's how I filled my day!

I laid in bed until 8 am (which is so late for me!!) and then wandered downstairs to have a breakfast of yogurt with blueberries and pb toast with banana.


Once Phil got up, I made smoothies with peach, blueberries, banana, and frozen pineapple. I loved this combination! We watched Face the Nation on CBS which is our Sunday morning tradition. Then Phil headed to his mom's for the day and I headed to my garden.

As I said last week, it's growing like crazy these days.


I picked more beans, a few cherry tomatoes, harvested the rest of our beets, and gathered up all the zucchini, which is growing like crazy. I see zucchini boats, zucchini "meatballs", and zucchini coffee cake in our future.


After my trip to the garden, I enjoyed a sandwich, roasted beets from my garden that I roasted last weekend, and cottage cheese while watching an episode of Suits.


After that, I had to figure out what to do with all the beets I picked! I love beets but they aren't Phil's thing and there is no way I could eat them all on my own. So I turned 2 pounds of beets into refrigerator pickled beets (I subbed apple cider vinegar for white vinegar as I think that will give them more flavor!). I loooove pickles so can't wait to snack on these throughout the week and share some with my parents next weekend when we go to the lake.


The rest of my afternoon was incredibly lazy. I laid on the couch and read my latest book, A Little Life. This book is so good but so heart breaking (hence the reason it's been referred to as emotionally devastating. This book is not for the faint of heart!). Before long, Oscar had joined me (she loves it when I lay on the couch!) and we took a little nap together. I was definitely nervous about how well I would sleep after sleeping in AND taking a nap, but oh well! Last week was busy and I guess my body needed the extra rest - plus kitty's sleepiness tends to rub off on me when we are cuddling!

Phil got home around 8 and we caught up on our days. Before I knew it, it was time for bed!

How did you spend your weekend? While Sunday was pretty lazy, Friday and Saturday weren't as we hosted friends for dinner on Friday night and went to a get together with 2 other couples on Saturday night (after a full day of adulting!).

Your day sounds so wonderful!!! This is coming from the one who adores summer, should it be shouldless days July? I'm seeing this summer flash before my eyes and I want it to last as long as possible!!! It's only 26 days until the wedding! We went down to GA this past weekend to visit Margs, Alex and the boys and we had a wonderful time!!! Saturday we took the kids to the pool and let them wear themselves out swimming!

I love pickles beets, and beets in general! Yum, can't wait to taste them!
We had a great weekend as the weather really cooperated for the most part, although it was a bit windy on Saturday so the lake was rough. Sunday was really nice! The house was full of family so the hours flew by!

Sounds like an awesome day! I love pickled beets! Hopefully I get enough from my garden to use your recipe :) If not I might just have to pick some up at the Farmer's Market. Our weekend was pretty low-key, and mostly spent at home, but I felt like we spent a decent amount of time doing stuff as we did some cleaning, hosted family for dinner and hung our gallery walls. I also slept in both days and it was GLORIOUS. Was hard to get up at 6 again this morning for work!!

ah the shouldless days are always so much fun! Your garden is doing great. I'm totally jealous, haven't pulled that much produce out of mine yet.

I am totally jealous of your shouldless days! Want to borrow my kids so I can have one? ;) I read your post when I was awake feeding Gabe early in the morning, and saw it originally said August. I was like hm, strange, I swear it's still July! Haha

Sounds pretty perfect to me! Especially the Oscar part! And I loved your breakfast and then smoothies! Your garden is rocking it. I have to say I'm with Phil on the beets -- maybe pickled would help!

We had a nice day at the lake -- started out gloomy but shaped up well! I painted, Rick rode, did a little house stuff and cooked wonderful meals. Packed up to come home on Monday. All good.

That sandwich, beet, and cottage cheese lunch looks sooooo good!! And those pickled beets - mmmmmmmm!! I am a pickle lover, and a beet lover, so the combination is perfection to me.

Yes to shouldless days - especially for those of us who are childless right now. One of the things I am trying to do more of is celebrate what I "get" to do since I am childless and not in a relationship. It's so freeing!

My weekend was good! I met up with a friend to write on Friday night. Saturday, I went to spin class, did some freelance work, and then had a pedicure + dinner date with my mom. And Sunday was spent in freelance work mode, though I was able to sneak outside for a long walk in the morning, which was nice!

I don't think I've ever had beets, much less pickled beets. I am such a picky eater that I'm not sure I would like them! Ha.

Pickled beets are the perfect food! So delicious.

I spent a lot of my weekend riding my bike or wandering around, so that was nice. I also did a ton of meal prep and some chores, which I struggle to stay on top of over the summer so I was super happpy to get those things done.
