Greetings and happy Tuesday! I'm shifting the focus of this week's post from salads to breakfast, mostly because the salad I prepped this week was a Greek salad, which is such a basic, easy salad. I picked it as it isn't labor-intensive, which is good since my hands are still stiff/tender from my RA flare so I'm trying to not overuse them. I did make a good, refreshing dressing that I wanted to share, though, as I know some of you have been enjoying the salad dressing recipes. So here are the ingredients for the Greek vinaigrette I made. I doubled it so that it would yield a little over 1 cup of dressing. Similar to other dressing recipes I've made, I only had to buy 1 ingredient (lemon) so it was low cost:
- 1/4 c. EVOO
- 2 T. red wine vingear
- 1/2 of a lemon, juiced (recipe calls for 1 lemon but I found it to be a bit too lemony)
- 2 cloves of garlic, minced
- 1 t. dried oregano leaves
- 3 pinches of salt
- 10-15 grinds of black pepper
This week I wanted to share the new breakfast that I've been eating this month. For the last 3+ years, I have been eating GF oatmeal with a banana for breakfast nearly every day of the week. What can I say - I am truly a creature of habit! However, lately I was feeling a need for a change but it needed to be something that is as quick and easy as oatmeal. Then I saw this recipe for Petite Crust-less Quiche on Skinny Taste's most popular recipes of 2015 post. I tried them for the first week of January and they were excellent so this is my new go-to breakfast at least for the time being.
What I like about this recipe is:
- they refrigerate/freeze well and taste great when re-heated.
- they are versatile. The recipe calls for onions and green peppers, but you could substitute whatever vegetable you would prefer or have on hand. Some things I'll be trying in the future will be broccoli and asparagus.
- they are very filling. It helps that they are packed with protein (18 g). I eat them with a little salsa on top and have been able to push back how early I have my mid-morning snack of yogurt and granola, so these are definitely more filling than the oatmeal + banana I was eating.
If you make these, one tip I have is to buy liquid egg whites instead of separating eggs yourself. The recipe calls for 4 egg whites and I think it's hard to find a use for 4 egg yolks (at least for me). So it's much less wasteful if you just buy liquid egg whites, which can be found near the egg beaters in the grocery store. According to my carton, 3/4 c. of eggs whites = 4 large egg whites.
Do you have a breakfast regimen or do you change up what you eat each day/week? For me, I value something that is fast, easy and healthy versus full of variety. But I'm all about making it easy to eat healthy.
These look awesome! I saw a similar recipe but I like this one much better! I have been thinking about doing something like this as I need to change to something other than my protein shakes now and this would fit the bill! Thanks for posting this and also the delicious salad dressing recipe! Why do we buy them when they are so easy to make and taste so much better?

ReplyDeletethese days I'm having a chocolate protein shake and greek yogurt for breakfast, making sure I have at least 20g of protein (usually closer to 30!) to start my day and get me on my way to my insanely high protein goal for the day :)
I made these mini quiches for brunch club before and they're darling family style! Mine had a crust though.
ReplyDeleteI was making something similar to this last year, but it was a different recipe and the eggs turned out to be a little rubbery and kinda grossed me out, ha, so I stopped making them. Right now, I am eating cereal for breakfast, which I know is not the healthiest option so I might try my hand at these soon! Everything I've made by Skinnytaste has turned out excellent, so I'm sure these will, too!
ReplyDeleteI made something similar once and it was good. Ive been having a hard time with breakfast lately. Nothing ever sounds good and my gag reflex is so bad. Toast and cereal have been winning which isn't very healthy.

ReplyDeleteI have been horrible about breakfast lately because I am so rushed to get out the door for work, that I will sometimes eat a handful of trail mix.....
But when I'm pro-active and premake my breakfast I do overnight oats - oats, 1 scoop vanilla protein, cinnamon, berries, 1/2 banana - and I bring that with me to work .
Once Ryan is off night shift...(which by that time I'll be at my WAH job) I am going to resume making smoothies in my ninja! But currently I have to tip-toe around the house most mornings! Bahhh! (can you tell I'm over his schedule? Ha!)
I made something very similar as party food once and I went with cheese and onion but I think broccoli would be delicious.
ReplyDeleteMonday to Friday I have toast for breakfast and when they're in season I have avocado smashed on top. At the weekends I try to do something different since I have more time so it can be porridge, scrambled eggs and mushrooms, shredded wheat cereal, soft boiled egg, cooked tomato and sausage, or pancakes - and all served with a big pot of tea or coffee so it feels really leisurely.
Great breakfast idea, I'm going to copy you! Except I will use whole eggs, because I love the yolk!

ReplyDeleteI still haven't tried making these yet but I'm going to in the next week or so! I just might have to cut out the cheese if they have any. I have really been enjoying that fennel egg recipe this week. I had never cooked with fennel before but it's a really interesting flavour. Also it must be full of fibre because that recipe has been keeping me super full all morning!
ReplyDeleteFour egg yolks? Time to make lemon curd! My favorite! I'm having a make-and-take Valentine day in early February where people drop in and make a card or as many as they like. I wanted to have snacks and the quiches are a great idea -- quiches and heart cookies, good for day and into the evening. Thanks, Lisa! (Plus I can make them ahead!)
ReplyDeleteI'd definitely make those! I love a savoury breakfast in the morning. I am super happy if I have made a quiche, fritatta, or wifesaver, and I can warm that up. If I don't have that on hand, I'll have homemade bread, toasted with lots of butter. Occasionally I'll have oatmeal, a toasted tomato sandwich, or something else.
