Cooking with Curry

I took a brief hiatus from cooking since the last 2 weeks have been chaotic, to say the least. But tonight, after working on Derivatives homework for 4.5 hours with my homework partner (insert sigh), I figured it was time to take a break and do some cooking!

I love Curry so decided to try making a Curry dish. I was a bit really skeptical that the ingredients in the recipe were actually going to taste good together. The recipe calls for chicken, a granny smith apple, onion, green pepper, ginger, raisins, and curry among other things. But the ingredients all came together surprisingly well!

I started off by sauteeing some of the veggies, garlic, and ginger.


Then I added the curry powder, cinnamon, and salt.
Then I added the chicken that I had previously cooked and let it simmer until it looked like this

Before eating it, I topped it with some toasted almonds, and voila!

All the random ingredients tasted so wonderful together. I am really not familiar with curry recipes so am wondering if it's common for the spice to be paired with sweeter ingredients like apple.

Tomorrow morning I get tested to see if I have a gluten intolerance! I know most people hope for negative test results, but I am actually hoping that I test positive. It would just be really nice to know what the culprit is and why I feel like I do. Even if I don't test positive, I think I am still going to remove gluten from my diet. My cousin Suzanne has Celiac and knows I am looking into going Gluten Free, so on Friday night, she brought me a couple of delicious treats from a Gluten Free bakery called, Cooqi. They are so delicious & I'd never guess they were made with gluten-free products!!

I love curry and this looks great! I'm not totally familiar with curry recipes either, but I have heard of curry and raisins going together.

I am impressed--I wi will have to try that recipe! I don't thihnk I've ever had Curry...... let me know what the results are on your gluten tolerance test!
